For All My Kale Lovers - A New and Delicious Recipe


So winter is still upon us and in some cases still dumping major amounts of snow. I don't feel so bad for all my friends with 30 inches of snow on their front step because you can't go sledding or make snow angels in spitting rain. Yes, that is what Atlanta has been experiencing since December. It hasn't been fun. But the good news is that kale, the dark green leafy vegetable that prevents cancer and is high in antioxidants, is still in season. What better to chase the winter blues away with then a warm and hearty soup?

Well, I just made a kale and white bean soup that you must try. Its so tasty that you won't even realize you are eating something good for your health. I actually halved the recipe and I got about 4 servings. But here is the recipe that serves 8.

Ingredients:

2 Tbls EVOO
4 cloves garlic, chopped
2 stalks celery, sliced
1 large onion, chopped
Raw sea salt
Crushed black pepper
2 15.5oz cans cannellini beans, rinsed
1 cup orzo pasta
1 bunch kale, thick stems discarded and leaves torn into 2 inch pieces (8 cups)
2 Tbls fresh chopped rosemary (optional, cause if you don't love rosemary in a soup then you won't love it in this soup either)
1/2 cup shaved Parmesan cheese
1 Tbls fresh lemon juice

Steps:

Heat oil in a large pot over medium-high heat. Add the garlic, celery, onion, 1 and 1/2 tsp salt and 1/2 tsp pepper and cook, stirring occasionally, until tender, 4 to 6 minutes.

Add the beans, pasta, kale, rosemary (optional) and 8 cups of water. Cover and bring to a boil. Reduce heat and simmer until the pasta and kale are tender, 4 to 5 minutes (or until the pasta and kale are cooked to your liking).

Stir in the lemon juice and sprinkle with the shaved Parmesan before serving. Serve with warm fresh baked bread, cause who doesn't always have a loaf of fresh baked bread in the house, right?

So seriously, this soup was delicious. Now if only I could get my kids to eat it.....

Organic Brands and Their "Not So" Organic Parent Companies

As the word "organic" become more and more common place in our society we have to become more educated and vigilant in our examination of these products. Reading the labels are a must but we don't always find out everything we need to know by looking at a label. Ingredients are telling but the processing and manufacturing facilities and the chemicals used there are not disclosed on labels. We need to dig deeper and see exactly who is making these products and what their true mission is. Most big CPG (consumer package goods) companies are out to generate revenue (sales) while simultaneously cutting costs in order to increase margin. This all adds to the bottom line and thus increases value for investors. The stockholder is the real stakeholder in these companies, not the environment or your health for that matter. Now I am not saying that these companies are bad for your health, its just that some of them have bought up once "pure" organic brands and have applied their best practices that work for their bigger mass marketed brands and some form of hybrid winds up taking its place. Its not all bad, but not all good either.

For example, Burt's Bees was once a small individually owned company with strong values and a mission. Burt Shavitz, living in the wilderness (how much more natural can you get), started his business from the honey harvested in his own backyard and then sold it in pickle jars from the back of his pickup. Roxanne Quimby, his eventual business partner really was the inspiration behind the line of natural beeswax products they had come to develop. She eventually bought Shavits out when their partnership went sour and grew the business to $43 million in revenues by 2002. However, money was a little more important to Quimby than to Shavitz as she sold her majority stake in the company and hence all the control over production and ingredients to Unilever in 2006, who then sold it to Clorox in 2007 for a sum total of $925 million. Amazing story right? Going from very humble beginnings in Maine with some honeybees to $925 million. You must be thinking, "What happened to Shavitz?" Well, he is back in Maine, living among nature and probably pondering the fate of his once pure minded business.

So Clorox bought Burt's Bees. Yes, you got it. A chemical company that makes bleach bought out an all natural personal care product company. Why might you ask? Well, Clorox is competing with the likes of Proctor and Gamble and Colgate-Palmolive. These companies have very developed Household care categories but also make tons of money from personal care products as well. Combine that with the rise of consumer interest in "natural" and "organic" products and you can see why Clorox would be interested in a company like Burt's.

Now the changes can begin. Slowly of course but eventually the Burt's division will have to report to headquarters and show margins that are competitive to all the other Clorox brands. Costs will have to be cut, global suppliers will be used, manufacturing will eventually move to a central location and all the natural allure of Burt's will have become a thing of the past. Except for their marketing, naturally. Burt's will continue to position itself as the small "hippy" pure and natural personal care company it used to be. People who don't know won't be able to even tell the difference. The colors and the packaging will remain the same for the most part (there may be some new and exciting multi-packs and displays, etc), the story won't change and neither will its "organic origins". But everything else that makes up Burt's will eventually have to succumb to shareholder pressure for profits. Its only 2010 so maybe Burt's still has some of its roots left in the brand, but not for long....

Burt's is just one example. There are many others to tell. Big Natural Food Store Brands are getting snatched up by even larger corporations so they can add "organic" to their portfolio of brands. Its all the rage!!

The point is that these large corporations don't have the idea of social responsibility as near and dear to their hearts as the original smaller companies did. These once small start ups have now been swallowed up in the massive corporate culture that breeds in these conglomerates. The passion for purity flame dies out and the strict adherence to the original mission get blurred and then eventually disappears. Pesticides find their way into these products, unfamiliar chemicals and additives do too. The rules aren't that strict anymore and the product eventually morphs into a hybrid of something sort of organic but not really. Can I say, a mass marketed wolf in an organic sheep's clothing? Yeah, something like that.

So be careful and don't fall prey to all the marketing tricks out there. There are still some good organic brands that maintain a high amount of integrity when making their products. Hopefully they won't sell out and leave us with just another brand that dilutes the meaning of the word "organic" or "all natural".

Edited to add: Because I would like to remain fair and balanced in my analysis of green products, I am adding this link to a NY Times article that talks about the effect that Burt's Bees is having on the corporate culture at Clorox. This article was written around the time of the purchase so I am sure there were a lot of lofty goals set as to how the business would stay true to its intended mission. I think a follow up analysis is needed to really see how Burt's has changed if at all since its purchase. More recently, Clorox has come out with a green household care line called Green Works. They are claiming it to be free from all harmful toxins but that remains to be seen. A comparison to some of the brands I mention above is necessary to see how true that statement really is. Curing Ear Infections Naturally


I have NO IDEA why more people do not know about this. I have NO IDEA why doctors do not prescribe this or even suggest it as an option. Our medical decision tree is completely out of whack and is actually set up to harm us rather than help us in many situations. Let me begin by telling you our story (before I give away the BIG cure!!). By the way, this cure has been around for centuries and I have even blogged about it once before but I didn't realize it would be so potent for ear infections too!

So it was the beginning of December and I was gearing up for the boy's big 2nd birthday party. We weren't doing anything extravagant, just a small party with close friends at the house. But anytime you host it winds up being bigger than you even expected. About 1 week prior to the party Cole gets sick. I assumed it was just another virus and that I would use my oils to help him pass it through his body. Well, his cough was getting better but he seemed to be in pain so I decided to take him in to the doctor. To my horror and and surprise, Cole and Jake both had ear infections in one ear and required an antibiotic! I was devastated because I never had to use antibiotics on my boys (with the exception of one dog bite) and I was so proud of this fact. Now my record would be broken and my boys would be exposed. Modern overuse of antibiotics for ailments that don't require them strengthens bacteria and helps it become resistant to those very same antibiotics. We are actually making ourselves sicker by all the antibiotics we take.

Well, I left that doctors office defeated and filled the scripts. For the next 10 days my boys took 2 doses daily of amoxicillan. They took it like champs and never complained. They seemed to be out of pain and got their energy back. We survived the birthday party and everyone had fun. I also did not hear of anyone getting ear infections after the party which is also a good sign. But about 2 days later Jake started secreting goop from his eyes and both of them started getting very colorful boogers. This to me was another sign of infection. So I took them back to the doctor. Well, wouldn't you know it, they both had DOUBLE ear infections!! "How could this be?", I asked myself? I thought the antibiotic was supposed to kill the infection? Apparently, it wasn't strong enough and they needed to go on a round of Augmentum. WOW. I was starting to feel ill myself just thinking about the next 10 days and what my boys would have to take.

So off we went. I was definitely pissed but I filled the scripts once again for the antibiotic. It didn't feel right to me that I was doing a 2nd round when the infection obviously didn't respond to the 1st round. Its not like they got a whole new ear infection. This was the SAME ear infection that just got worse because it has been left to grow.

The Augmentum was disgusting and the boys told me so. However, they took the meds like big boys and after a day I saw some of the eye goop diminish but the colorful snots were still there and the cough got much worse. After 10 days I felt I had to bring them back to the doctor AGAIN. The eyes got worse again and now Jake looked like he had shiners under both eyes. Iron deficiency actually crossed my mind for a minute. But I regained my senses after the pediatrician told me that they would need a 3rd round of antibiotics to treat their continuous double ear infection that still HAD. NOT. GONE. AWAY!!!!!!!

I was furious. Words don't justify my emotions. I wanted to strangle the doctor. But I held back and listened like a good mother would do. Apparently it sometimes takes 3 rounds of antibiotics because they don't get right to the heart of the infection. They get digested and have to go through the intestines before entering the blood stream and by that time they are diluted. He then went on to tell me that if the 3rd round didn't work (for the same reasons that the first 2 didn't) we would opt for 2 shots in the thighs for three days straight. That way the meds would go straight into the blood stream and have the best shot at attacking the infection. WHAT??? I was so confused. Why were we going through another 10 day regimen of oral meds when there was no guarantee that they would work and that we may just wind up giving out SHOTS of antibiotic to kill the ear infections. If you could tell, at this point, I was not a happy camper and just needed to get out of that office.

I was scared for my kids because untreated prolonged ear infections can cause hearing loss. I did NOT want this to happen and I needed to react fast. I needed an alternative and quickly. At that point, logic came back to me. I figured that if this stubborn infection did not respond to Amoxicillan or Augmentum then it definitely would not respond to another antibiotic that is just a "cousin" to the previous two. I mean come on!! Common sense people!! This is not rocket science. I decided to take matters into my own hands and actually got mad at myself for not doing this sooner. I BLOG about homeopathic remedies so I should have gone to this treatment as a first response but I guess since it was their 1st ear infection in their lifetime I got scared. It happens.

So I pulled a U turn in the middle of the road and headed to Nuts N Berries, my local health food store. I bought three things: Garlic Oil with Mullein, Grapefruit seed Extract and Probiotic with 5 billion CFU/gram. The garlic oil drops would go in the ears to cure the infection because garlic is one of the most potent anti microbials on the planet, the grapefruit seed extract would go in their juice to kill the yeast that was building up in their guts due to the antibiotics they had been on for 20 days straight. And the probiotic would promote the good bacteria to grow back in their guts since the antibiotic killed off everything good and bad.

I started this regimen immediately. Within 24 hours the infection was gone. AMAZING!! I kid you not. It was GONE. They woke up with clear eyes, no snot and more energy and appetite than they had in a month. Their eczema was clearing up because the yeast was being killed (eczema can be a sign of yeast trying to get out of the body). Jake's shiners are starting to lighten up and their cough is waning. Its still there but my oils will help get rid of it completely.

I am putting Imupower (Hyssop) on the outside of their ear and Thieves on the bottom of their feet. This will just give them a second immune boost to protect them from any other bacteria going around. I am also using DiGize on their bellies to kill additional yeast. They seem to be back to their little happy selves, running around on my couch and doing jumps onto the pillows.

Apparently, garlic kills the infection in 24-48 hours and also helps prevent future infections from occurring. How is it that doctors don't know this? Wouldn't they choose to use this first if it acts so quickly and effectively? Are they not in on our "little secret"? I doubt it. Big Pharma does A LOT to promote their drugs and doctors have fallen prey to their tactics.

It doesn't matter. I have found my cure. I bought an auto scope to look into their ears and besides some wax, it all looks clear and white. NO redness or anything. I plan to take them to a NEW doctor this week to confirm the eradication of the infections and talk to him about prevention. He is a homeopathic MD so he sees both sides of the coin. I am interested to hear what he has to say about garlic. To me its a miracle of nature.

Make This Your New Year's Resolution!

I just rented the movie Food Inc. last week. I didn't see it in the theaters because I had read the all the books by Michael Pollan (Omnivore's Dilemma, In Defense of Food) and felt that the movie was going to be more of the same. However, I did blog about the movie when it came out in theaters, urging everyone to go out and see it because, frankly, its easier than reading all the books.

Now its on DVD and one random night in December when all my chores were done, kids were in bed and presents were wrapped, I decided to sit down and watch it. I wasn't surprised to see what topics they were touching upon. It followed the Omnivore's Dilemma pretty closely. In fact, they even had the owner of Polyface Farms in the movie. That was actually nice to see (to put a face to the personality). What I wasn't prepared for was the actual sickness that I felt brewing in my stomach. Halfway through the movie, I had to remove myself from the TV and was sick for the next 15 minutes. I never thought a movie could revolt in such a way. I am not a normally queasy person. Blood and guts don't freak me out so why would some benign slaughterhouses have this effect on me?

It wasn't the blood and guts that sickened me per see, it was the entire process of how our food is grown, stuffed with poison and processed. The living conditions, the storage facilities, the enormity of it all and the ubiquity of it all. It seems to me that if you are not aware of what you are eating, you will just continue to consume until your body becomes diseased (prematurely of course). Most people will choose this course of action. That is what truly sickened me.

I turned to my husband and he was reading my thoughts, "thank the Lord that we are able to afford to buy our food from a farm". I feel so much better knowing that my meat is being fed what its SUPPOSED to eat by nature. I feel better knowing its raised in a humane environment by farmers that actually CARE. I am so glad its free from toxins, chemicals and medicine. But what still makes me uneasy is the thought that most Americans can not afford or do not have access to farm raised/grass fed meat. These people are burdened with decisions such as, "do I pay for my diabetes meds or do I buy food for dinner?". Its a vicious cycle because if they never ate the un-nutritious food in the first place, they may have not gotten Diabetes.

America's lower socioeconomic classes are suffering from diseases such as hypertension, heart disease and diabetes at ALARMING rates and its only getting worse. Our food supply is tainted and the government is only making it harder to obtain healthy food.

This movie is a wake up call. Everyone should see it. Don't turn a blind eye to what you consume. You only have one body and one life (not to sound like Sally Feilds in the Boniva commercial) and you shouldn't waste it by contaminating yourself with garbage.

Our food supply wasn't always like this. As recent as the 1970's there were over 1,000 meat packers in the nation, corn wasn't being subsidized the way it is today and antibiotics weren't needed to kill bacteria in the animal's rumens. Food production has changed DRAMATICALLY in such a short period of time that its actually mind boggling. Now there are as few as 13 meat packers that handle ALL of the meat coming from the CAFO's. A package of meat that you buy at your local grocer may contain ground pieces from over 100 different cows. Its scary. Not to mention the risk of food borne illnesses and we have all seen how rampant that has become in recent years.

I won't give away all the details about Food Inc. I will let you watch it and decide for yourself. But take the time to actually rent it and watch it. It would be the best New Year's Resolution that you could do for yourself. Get educated and take control of your health. Don't leave it in the hands of government because they are all getting THEIR meat from grass fed farms (I would put money on it!)

Why Saturated Fats Are Good For You

Low Fat Diet: Saturated With Lies
Beef. Chicken. Eggs. Butter. Coconut oil. Do these saturated-filled words sound like weapons of health destruction? According to current nutritional guidelines, I’m supposed to limit these foods because they’ll either lead to obesity, cancer, heart disease, diabetes or some form of suffering for the rest of my life. Many of you are nodding your heads in agreement right now.
It’s taken me a long time to realize that this is simply not true.
When I became a fast food drop out in my early 20’s, I turned to a low fat diet. I trimmed fat any which way I could and didn’t feel guilty when I broke down and ate low fat junk food.
I learned that low-fat junk food is still junk food, and a low-fat diet is still an unhealthy diet.

Why Are Saturated Fats So Bad For You?
Men’s Health published an excellent article that explained how saturated fats became known to be so bad. The credit goes to a physiologist named Ancel Keys, Ph.D., who published a highly influential paper titled “Atherosclerosis, a Problem in Newer Public Health.” Keys wrote that while the total death rate in the United States was declining, the number of deaths due to heart disease was steadily climbing. And to explain why, he presented a comparison of fat intake and heart disease mortality in six countries: the United States, Canada, Australia, England, Italy, and Japan.


The Americans ate the most fat and had the greatest number of deaths from heart disease; the Japanese ate the least fat and had the fewest deaths from heart disease. The other countries fell neatly in between. The higher the fat intake, according to national diet surveys, the higher the rate of heart disease. And vice versa. Keys called this correlation a “remarkable relationship” and began to publicly hypothesize that consumption of fat causes heart disease. This became known as the diet-heart hypothesis.


At the time, plenty of scientists were skeptical of Keys’s assertions. One such critic was Jacob Yerushalmy, Ph.D., founder of the biostatistics graduate program at the University of California at Berkeley. In a 1957 paper, Yerushalmy pointed out that while data from the six countries Keys examined seemed to support the diet-heart hypothesis, statistics were actually available for 22 countries. And when all 22 were analyzed, the apparent link between fat consumption and heart disease disappeared. For example, the death rate from heart disease in Finland was 24 times that of Mexico, even though fat-consumption rates in the two nations were similar.
The other salient criticism of Keys’s study was that he had observed only a correlation between two phenomena, not a clear causative link. This left open the possibility that something else — unmeasured or unimagined — was leading to heart disease. After all, Americans did eat more fat than the Japanese, but perhaps they also consumed more sugar and white bread, and watched more television.


The seven-countries study, published in 1970, is considered Ancel Keys’s landmark achievement. It seemed to lend further credence to the diet-heart hypothesis. In this study, Keys reported that in the seven countries he selected — the United States, Japan, Italy, Greece, Yugoslavia, Finland, and the Netherlands — animal-fat intake was a strong predictor of heart attacks over a 5-year period. Just as important, he noted an association between TOTAL cholesterol and heart-disease mortality. This prompted him to conclude that the saturated fats in animal foods — and not other types of fat — raise cholesterol and ultimately lead to heart disease.[1]


What about Margarine and Hydrogenated Fats?
Margarine and hydrogenated fats were the result of a food shortage in World War II. Butter became scarce and chemists experimented to find an alternative. They found that liquid vegetable oils could be turned into solid fat through a process called hydrogenation.
During this process, hydrogen gas is bubbled into the oil, which is heated to a high temperature. Nickel is then added to speed up the reaction. These hydrogenated fats are what make up margarine and shortening. Synthetic dyes are added to turn the whitish-colored hydrogenated fats into margarine. They were promoted as “low in cholesterol and saturated fats.” This is true. However, they are high in unnatural, harmful fats and cancer causing chemicals.[2]


Why Are Processed Fats So Bad?
If you are getting the wrong kinds of fats in your diet, beware. No doubt, your body needs a certain amount of fat every day, but it needs the “good” fats. If all you get is the processed kind, your body has no choice but to make use of them. Processed fats, especially the hydrogenated variety, confuse the body because their chemical structure is different than the naturally occurring fats normally recognized and utilized by the body.

Once the “bad” fats are absorbed, they are taken to the liver where they are stored or converted into energy. The chemistry of these fats is abnormal so the liver has hard time trying to figure out what to do with them. When a cell is damaged and needs fatty acids for repair or other purposes, these abnormal fats will be made available to the cell, especially if there is a lack of natural, essential fats. The cell will attempt to place the abnormal fat into its membrane, resulting in a weakened, malfunctioning cell.

While hydrogenated fats may not become rancid on the shelf, they induce all sorts of rancidity problems within the body. They waste antioxidants such as vitamin E and selenium, which function to prevent fats from becoming rancid.


When you eat too much GOOD saturated fat, the body converts it to monounsaturated fat—the main fat in olive oil, which lowers cholesterol. Some saturated fats, such as coconut oil, raise the beneficial cholesterol carrier HDL, which is linked to a reduced risk of heart disease. Ironically, the fat around the heart muscle itself is saturated.


What about Cholesterol?
By itself, cholesterol can be a good thing. Cholesterol is used to make all hormones and functions as an antioxidant – it naturally increases as we age.
Kevin Brown, author of The Liberation Diet, points out that the more cholesterol we eat, the less the body makes; the less we eat, the more the body makes. High cholesterol is a sign of something else failing to work properly in the body, not a disease that needs to be treated.


Bottom Line
When you eat fats as part of your meal, they slow down absorption so that you can go longer without feeling hungry. In addition, they act as carriers for important fat-soluble vitamins A, D, E and K. Dietary fats are also needed for the conversion of carotene to vitamin A, for mineral absorption, and for a host of other biological processes.

Humans have eaten animal products for most of their existence on earth and therefore, they have consumed saturated fats for most of that time. If saturated fats were of no value or were harmful to you, why would breast milk produce saturated fats like butyric, caproic, caprylic, capric, lauric, myristic, palmitic and stearic acids, which provide a naturally perfected source of nourishment to ensure the growth, development and survival of your infants?

However, There IS Still a Link Between Fat and Heart Disease!
Now, it is clear that there is some association between fat and heart disease. The problem lies in the fact that most studies make no effort to differentiate between saturated fat and trans fat.
